Courgette pie recipe

Courgette pie
Hello my loves! I hope you are all well!

Today, I have decided to write about something I cooked last week and it was absolutely delish!

So.... This is a courgette pie! Not very fussy, fun to make and beautiful to look at!


For a 30x20 tray you will need:
  • 1 pack of shortcrust pastry
  • 6 courgettes
  • a chopped onion
  • 1-2 mashed garlics
  • 100 gr of feta cheese
  • 1-2 eggs
  • 1 pepper (any colour)
  • 2-3 slices of bacon
  • spices (dried or fresh): a pinch of salt, pepper, oregano, dill, peppermint, basil, parsley and whatever else you like
Procedure:
  1. Grate the courgettes let them drain.
  2. In the meantime in a small pot or in  pan add the bacon.
  3. When cooked, add the onion, the garlic and the pepper and let them cook for about 10-15 mins. You want them to be dry.
  4. When the courgettes are drained, put them in a bowl and add the egg, the feta cheese, the spices and the cooked mix.
  5. Mix them well until uniform and leave it aside.
  6. Now, take the pastry out of the packaging and cut it in 2 pieces. One of them must be slightly bigger than the other.
  7. Add some flout to a surface and put the bigger piece on it. work it until thin.
  8. After adding some oil on the tray, add the pastry as shown below.
  9. Put the mix in.
  10. Work the smaller pastry piece as above and put it on top.
  11. Add some oil and bitten egg on top.
  12. Bake at 180 C for about 45 mins depending on the oven).

Add the mix.
Before going in to the oven.
Ready! Let it cool before serving!
Tip to tip:
  • To make the draining process faster add some salt and help with a spoon.
  • Do not add too much salt, because the feta cheese is salty enough.
  • You can also use a different cheese.
  • You can use only courgettes and leave out the potatoes and the carrots.
  • Make some holes with a knife on the top of the pie to allow the moisture to escape.
  • Put the tray quite high in the oven to allow the air bake the bottom pastry (this doesn't really work if your oven works with resistances).
  • Skip the bacon if you are a vegetarian.
