Pea recipe! Light, summery and Greek!

Peas: absolutely Greek

Today, I have decided to write a very different post. This is something I have been meaning to do for a long time and now I think it's the perfect opportunity! Today guys we are cooking!

As you know I am Greek and I absolutely love cooking! Not fancy things, but different. Take a traditional dish and change it a little bit or even create my own.
Let's get started!
This dish is one of my absolute favourites! It is light and perfect for summer!
This dish is vegan, but everyone can enjoy it! Kids love it, because of the vivid colours! Not to mention the taste and how budget friendly it is!

Let’s start!

Cost: £3*
Preparation time:
 About 10 minutes

Cooking time: About 45 minutes
Depending on your fridge, after cooking it can be kept refrigerated for about 3 days.
If cooked without potatoes, it can be kept in the freezer and defrosted either naturally (in or out of the fridge) or in the microwave.

Ingredients:
4-6 portions (depending on your appetite!)
  • 1 kg peas (frozen or fresh)
  • 1 chopped onion or spring onions
  • Salt, pepper
  • Dill
  • 1 cup of tomato juice (according to preference): passata or chopped tomatoes
  • Olive oil
  • 2 medium potatoes
  • 2 carrots
All ingredients can be frozen or fresh.

Pea recipe ingredients
 Procedure:

  1. Put the pot on a hot hob and then add olive oil. Enough to cover the pot’s surface and a little more.
  2. Add the chopped onion and give it a stir until it changes colour.
  3. Add the rest of the vegetables (carrots, potatoes and then the peas) and give them a stir.
  4. Add the tomato juice and water just enough to cover everything.
  5. Add salt, pepper and dill.
  6. Cover the pot and leave it to boil in low heat until all vegetables are soft about 45 minutes. You can check every 10 minutes to see if the water is enough and the food doesn't stick to the bottom of the pot.

Add the onions and give them a stir for a couple of minutes


Same with carrots ...

...and peas


Add the tomato


Add water...


...just to cover it


Add salt, pepper and dill


Stir


Cover it and let it boil at low heat for about 45'
Tip to tip: 
  • Alternatively you can use a chili pepper. Grind it with some salt for better results.
  • If you want more juice, add more water.
  • For more of a kick to the taste add some fresh pepper, any colour will do.
  • You can skip the dill if you don't like it.
  • You can add some garlic.
  • You can skip the potatoes if you are on a diet.
  • Use the ratio of the ingredients according to preference.
  • When served you can add a little bit of olive oil. Tastes much better this way!
  • You can serve it with some feta cheese as a side! Yummmmmyyyyyyy!!!
Add a chili pepper instead of pepper
